We have had a burst of heat here and its meant that SPRING had sprung with allergies and increased PITTA energy (and perhaps as well a complete mirror to the MARS in CANCER retrograde that has made us all grumpier than we even expected - luckily that is almost over). So I have been been adding some PITTA balancing elements into our table - cucumber, mint, yoghurt (and a squeeze of vitamin C because it is a natural histamine blocker).
This is the amazing dippy spread I used with the homemade Falafels you all loved so much. I don't think it's a Tzatziki or a Talatouri but I do know it's a really tasty delivery that satisfies and brightens your spirits and your tastebuds.

Cucumber
Lemon
Garlic
Salt
Greek Yoghurt
Fresh mint
I grated the cucumber then squeezed out the juice a little in my hands (yum btw) then added it to a bowl with grated garlic, lemon zest, lemon juice, salt, and a little fresh mint (if I had a lot I would add a lot).
Mix together. It was so simple. But let's all feel free to make this in 100 combinations for the next four months. Add some tahini, some fresh chilli, a splash of lime, swap the yoghurt for coconut yoghurt, wild garlic NETTLES! the possibilities are all opportunities to play.
