Under a DARK MOON we seek small moments of happiness and nourishment.
If you have followed me here or on instagram for a while you will know connecting with cycle of the MOON is a beautiful way to connect with our HOLISTIC WELLBEING. NEW MOONS are perfect moments for using up our veggie draw. Making something as a simple tray bake with olive oil and salt can be as symbolic as it is practical.
For today's SUNDAY ROAST under a sky still split from the ECLIPSE we upped our anti with a whole cauliflower (it might have been necessary to shave off certain bits that had lingered too long, soaked in cumin, zatar, olive oil and salt. I rubbed the cauliflower (which I had pre-steamed for 15 minutes) and placed it gently in a baking tray with thickly sliced onion, two kashmiri chillies, big chunks of butternut, and three whole sweet peppers.

I added a cuppish of green lentils to lots of water and simmered them for 30 minutes (but if there had been a can I would have used them).
While the cauliflower baked for about an hour on medium I made a sauce by zesting a lemon, grating two cloves of garlic, salt, and pepper and adding it to a bowl with a cup and a half of greek yoghurt before stirring in a splash of tahini.
Taking the roast out of the oven I basted it with the olive oil now rich with the burst chillies and fallen cumin, and added a tablespoon of tamari, twirl of honey, and a knob of butter to the lentils.

To tune in a little deeper with setting intention with the NEW MOON and our own intuition I am spritzing our inimitable Bohobo Aromatherapies CHAKRA BALANCING SPRAY and incorporating a little extra intentional rest(even if it's for 10 silent minutes).
